Octopus into a pot with a bay leaf and no water at all — it gives out plenty of its own — lid on, lowest heat, until a knife goes into the thick end of a tentacle against no resistance. Between forty minutes and an hour and a half, and the only way to know is to keep testing it.

Potatoes on in salted water while that happens, until they are just tender.

Left to cool in its own liquor rather than lifted out. Cooled in the pot it stays soft; drained hot it tightens as it goes cold.

Tentacles cut off whole, red onion sliced paper thin, lemon halved, potatoes broken up.

Tentacles brushed with a little oil onto a fiercely hot dry griddle until they blister and char at the edges. Two or three minutes a side — they are already cooked, and this is only for the burnt bits.

Sliced thick over the potatoes with the rest of the oil, the vinegar, lemon, oregano, onion and parsley.
Worth knowing
Greek harbours still dry octopus on lines in the sun — the tenderising began, in older times, by beating it against the rocks.
