  • 1onion
  • 2carrots
  • 2celery sticks
  • 1courgette
  • 150gsavoy cabbage
  • 200gpotatoes
  • 200gtinned tomatoes
  • 1 tintinned borlotti beans
  • 70gspaghetti — snapped into short lengths
  • 1200mlvegetable stock
  • 30gpecorino romano
  • 1 small handfulbasil
  • to tastesalt and pepper

Method

5 steps

  1. chop · 12m

    Onion, carrot and celery diced small and even. Everything else into pieces a spoon can manage in one go.

  2. fry · 12m

    The soffritto into the oil over a low heat for a full ten minutes, until the onion is soft and sweet. Hurried, this leaves you with vegetables boiled in water, and nothing later in the pot puts that back.

  3. simmer · 25m walk away

    Potatoes, tomatoes and stock in, and left at a bare bubble with the lid ajar.

  4. simmer · 12m

    Courgette, cabbage and the drained beans in for the last stretch, and the snapped spaghetti for whatever time the packet claims.

  5. finish · 3m

    Off the heat. Basil, grated pecorino, black pepper, and a last spoon of raw oil into each bowl — raw oil at the end is not the same thing as the oil it was cooked in.

Worth knowing

Minestrone has no recipe, only a principle: whatever the season yields, cut small and simmered together. The soup is a calendar.

A bowl routinely carries five or more vegetables plus beans — fibre and variety in one ladle.
