Ingredients
Serves 2 · dimmer marks are storecupboard
- 4ripe tomatoes
- 1cucumber
- ½red onion
- 150gfeta
- 1 handfulkalamata olives
- 2 tbspolive oil
- 1 tspdried oregano
Method
3 steps
chop · 8m
Tomatoes into wedges, cucumber in thick half-moons, onion sliced paper thin. Nothing small — this is not a chopped salad.
fold · 2m
Everything but the feta tossed with the oil, salt and half the oregano.
finish · 2m
The feta goes on WHOLE, in a slab, with the rest of the oregano and more oil over it. Crumbling it is the one thing a horiatiki never does — and there is no lettuce in it either.
Worth knowing
A horiatiki — a village salad — contains no lettuce at all. The leafy version is an export.
