  • 250gbuffalo mozzarella
  • 3ripe tomatoes
  • 1 handfulbasil
  • 2 tbspolive oil
  • 4 slicesgood bread

Method

    Both out of the fridge half an hour beforehand. Cold mozzarella tastes of almost nothing and cold tomato of less.

    Tomatoes and mozzarella into thick slices, torn rather than cut if the mozzarella is soft enough.

  3. finish · 3m

    Alternated on the plate, basil torn over by hand, oil and flaky salt. No vinegar, no balsamic glaze, nothing else.

  4. grill · 3m

    Bread toasted to carry the juice left on the plate, which is the best part.

Worth knowing

It is said to have been assembled for a royal visit to Capri in the colours of the Italian flag, which is why nothing else is allowed on it.
