Method

Rinse the poha in a sieve until just damp, then leave it. It needs no more water than that — soaked properly it turns to paste.

Dice the onion small.

Peanuts in the oil until they colour, out; then mustard seeds until they pop, curry leaves, onion and turmeric.

Poha through gently with a fork. Stirring hard breaks it.

Worth knowing
Poha is rice that has been parboiled and rolled flat, so it needs only rinsing rather than boiling — which is why it is a ten-minute breakfast.
