  • 200gprawns — or firm tofu
  • 2eggs
  • 2 tbsptamarind paste
  • 2 tbspfish sauce
  • 2 tbsppalm sugar
  • 40gpeanuts
  • 1 handfulspring onions and beansprouts
  • 1lime

Method

    Noodles in warm water until bendy but still firm — they finish in the pan, and boiled noodles turn to paste there.

  2. fold · 3m

    Tamarind, fish sauce and palm sugar stirred together until the sugar dissolves. Taste it: sour, salty and sweet in that order.

  3. chop · 7m

    Everything else prepped and lined up beside the hob.

  4. fry · 5m

    Screaming hot pan: prawns out fast, egg scrambled in the space, noodles and sauce in, tossed constantly.

  5. finish · 2m

    Sprouts and spring onion through at the last second so they stay raw, peanuts and lime over the top.

Worth knowing

Pad thai was actively promoted as a national dish by the Thai government in the 1930s and 40s, partly to cut domestic rice consumption during shortages.
