  • 4pav or soft rolls
  • 10gbutter
  • 1onion
  • 1tomato
  • 2green chillies
  • 1 handfulcoriander
  • 1 tspturmeric and chilli powder

Method

  1. chop · 6m

    Onion, tomato, chilli and coriander all diced very fine. Bhurji is a scramble, and anything bigger than a pea reads as a lump of vegetable in it.

    Onion and chilli in the butter until soft, then the tomato and spices cooked until the tomato has lost its shape completely.

  3. fold · 2m

    Eggs beaten with salt and poured in, then stirred without stopping over a medium heat.

    Kept moving until it is dry and crumbly with no wet egg left anywhere in the pan. Bhurji is scrambled hard on purpose, and cooked to that point it is also safe standing on a stall at midnight, which is where it belongs.

    Pav split and toasted in a little butter on the same pan while the eggs sit.

  6. finish · 2m

    Coriander over, lemon if you want it, and the pav to scoop with rather than cutlery.
