Ingredients

  • 200gchicken thighs
  • 180mlcoconut milk
  • 100gprawns
  • 2eggs
  • 1 tbspoil
  • 100grice vermicelli
  • 3 tbsplaksa curry paste
  • 60gtofu puffs
  • 100gbeansprouts
  • 1 tbspfish sauce
  • 600mlchicken stock
  • 1lime
  • 1 handfulcoriander

Method

  1. soak · 20m walk away

    Vermicelli in just-boiled water until soft, then drained and left in the colander.

  2. boil · 9m

    Eggs for seven minutes, into cold water, peeled and halved.

  3. fry · 8m

    Paste into the oil over medium heat and fried until it darkens and the oil comes back out around it. Under-fried paste tastes raw and gritty right through the finished bowl.

  4. simmer · 14m

    Stock in, brought up, chicken added and cooked until it is done right through with no pink, then lifted out and torn into pieces.

  5. simmer · 6m

    Coconut milk in, heat down, and from here it must never come back to a proper boil. Tofu puffs in, then the prawns for the last two minutes until they are opaque all the way through.

  6. finish · 5m

    Noodles into hot bowls, chicken and prawns on, soup over, egg and beansprouts on top, fish sauce and lime to taste at the table rather than in the pot.
