- 1lemon
- 3garlic cloves
- 2 tsporegano
- 2pita breads
- 100ggreek yoghurt
- ½cucumber
- 2tomatoes
- ½red onion

Thigh into thumb-sized pieces, all about the same size. Uneven ones mean half the skewer is dry before the rest is done.

Chicken turned through lemon juice, oil, crushed garlic, oregano and salt, and into the fridge. Two hours does most of the work; overnight is no worse.

Cucumber grated coarsely, squeezed dry in a cloth, and folded into the yoghurt with a little garlic. Unsqueezed it weeps, and the tzatziki slides straight off the meat.

Threaded on skewers with a gap between the pieces, over a hard heat, turned every couple of minutes until charred in patches. Cut one piece open before serving: it must be white right through with no pink and juices that run clear.

Skewers off the heat for three minutes. Straight off the grill the juice runs out onto the plate instead of staying in the meat.

Pitas warmed on the empty griddle, tomato and onion sliced over them, tzatziki, then the meat pushed off the skewer.
