  • 250gprawns — raw, shells off
  • 80gfeta
  • 1 tintinned tomatoes
  • 1½ tbspolive oil
  • 1onion
  • 3garlic cloves
  • 1dried chilli
  • 1 small handfulparsley
  • 2 slicesgood bread
  • to tastesalt and pepper

Method

    Onion diced small, garlic sliced, parsley chopped and kept back.

  2. fry · 8m

    Onion softened in the oil until sweet, then the garlic and crumbled chilli for a minute more.

  3. simmer · 18m

    Tomatoes in, cooked down until the sauce is thick and no longer weeps water at the edge of the pan. A thin sauce here poaches the prawns instead of baking them.

  4. fold · 3m

    Prawns stirred through the hot sauce, then feta broken over the top in big pieces rather than crumbled.

  5. roast · 8m

    Into a hot oven at 200°C, or under the grill, until the prawns are pink and opaque through and the feta has softened and coloured at the edges. Seven or eight minutes, and no longer.

  6. finish · 2m

    Parsley over the top, and bread to get the sauce out of the dish.
