Chicken sliced thin across the grain, cabbage shredded, carrot into matchsticks, garlic and ginger minced, spring onions cut long. Sauce measured into a cup. Nothing is lit until all of this is done and within reach.

Chicken turned through the cornflour with a spoonful of the soy and left while everything else is prepped — the starch is what keeps thin slices from drying out over that heat.

Noodles cooked a minute short of the packet, then rinsed under the cold tap and drained hard. Shake the colander until they genuinely stop dripping.
