  • 150gshort-grain rice
  • 80gsalmon fillets
  • 2nori sheets
  • 1 tspsoy sauce
  • 1spring onion
  • 1 tbspsesame seeds
  • to tastesalt

Method

5 steps

  1. boil · 20m walk away

    Rice rinsed until the water runs clear, then on with its lid and the lowest heat, and left alone with the lid on for ten minutes after the heat goes off.

  2. grill · 9m

    Salmon salted and grilled or fried skin-side down until it flakes, cooked right through, then flaked with a fork and the skin and bones taken out. A dash of soy and the sliced spring onion through it.

  3. rest · 8m walk away

    Rice turned over with a wet spatula and left uncovered a few minutes. Too hot to hold is too hot to shape.

  4. fold · 12m

    Hands wet, palms salted, a small handful of rice flattened, a teaspoon of salmon in the middle, rice closed over it and pressed into a triangle with about six turns. Firm enough to carry, no firmer.

  5. finish · 3m

    Nori cut into strips and wrapped round each one at the last possible moment — put on early it draws water out of the rice and goes to leather. Sesame over the top.
