  • 150glamb mince — for the kofta
  • 150gbasmati rice
  • 100gnatural yoghurt
  • 4tomatoes and peppers
  • 2 tspsumac and oregano

    Chicken into the yoghurt with half the spice; lamb chunks in oil and the rest. Mince kneaded and shaped separately.

    Everything onto the fire in order of how long it takes — lamb first, chicken next, kofta and vegetables last — so it all arrives together.
