- 80gdried chickpeas — or a drained tin, and skip the soak and boil
- 30gtahini
- 1lemon
- 1garlic clove
- 2 tbspolive oil
- ½ tspcumin
- 2pita breads
- to tastesalt

Cover the chickpeas with plenty of cold water and leave them overnight.

Drain, cover with fresh water and cook until they are falling apart — well past tender. This is the whole secret of smooth hummus.

Blitz the hot chickpeas with tahini, lemon, garlic and cumin, adding their cooking water a spoon at a time until it turns pale and loose.

Leave it twenty minutes. It thickens as it cools and the garlic settles down.

Warm the pita on a dry pan until it puffs.

Spread, make a well with the back of a spoon, pool olive oil in it, salt.
Worth knowing
The smoothest hummus comes from over-cooking the chickpeas until they fall apart and peeling them one by one. It is a matter of patience, not technique.
The sesame in tahini brings a substantial amount of calcium with it.
