  • 800gchicken thighs — bone-in, skin on
  • 350gbasmati rice
  • 2 tbspoil
  • 2onions
  • 2tomatoes
  • 3dried limes
  • 3 tspbaharat, cinnamon and cardamom
  • to tastesalt

Method

7 steps

    Onions sliced thin, tomatoes chopped, and each dried lime pierced twice with a knife tip so the broth can get inside it.

  2. fry · 14m

    Onions in the oil until deep gold, then the spices for a minute, then the chicken turned in it until the skin has colour.

  3. simmer · 40m walk away

    Tomatoes, limes and water barely to cover, lid on, low. Cook until the chicken is done right through — no pink at the bone and the juices running clear.

    Lift the chicken out. Measure the broth to twice the rice’s volume, top up with water if short, and stir the rinsed rice in.

    Chicken back on top, lid on, lowest heat, and left completely alone.

    Off the heat, still covered, ten minutes.

    Fork through from the bottom and fish the limes out or warn whoever gets one — they are bitter enough to stop a conversation.

Worth knowing

The dried lime — loomi — is a whole lime boiled in brine and left in the sun; it gives Gulf rice dishes their signature sour depth.
