    Turkey sliced thin against the grain, tomato sliced and salted on a piece of kitchen paper.

    Mayonnaise spread edge to edge on both slices — it is the waterproofing as much as the flavour, and bare bread under a tomato is a soggy sandwich by lunchtime.

    Lettuce down first against the bread, then turkey, then tomato in the middle where it cannot touch either slice. Cut across the diagonal.
