  • 100gdried broad beans — the small brown foul beans; or two drained tins, and skip the soak and the boil
  • 2pita breads
  • 1½ tbspolive oil
  • 1tomato
  • 1 handfulflat parsley
  • 2garlic cloves
  • 1lemon
  • 1 tspcumin
  • to tastesalt

Method

    Beans under plenty of cold water overnight. They roughly double, so give them far more room than looks necessary.

  2. boil · 1h 30m walk away

    Drained, covered with fresh water and left at a bare simmer until they crush easily against the side of the pan.

  3. chop · 5m

    Tomato diced small, parsley chopped, garlic crushed to a paste with a pinch of salt.

  4. fold · 4m

    About half the beans crushed roughly in the pan with a ladle of their cooking water, the rest left whole. Mashed smooth throughout it stops being foul.

  5. grill · 3m

    Pita warmed on a dry pan until it puffs.

  6. finish · 4m

    Garlic, cumin, lemon and olive oil stirred through off the heat, tomato and parsley heaped on top, bread to scoop with rather than a spoon.

Worth knowing

Egypt’s national breakfast, ladled from great copper pots that simmer overnight — the dish predates the pyramids’ completion.

Fava beans are among the most fibre-rich legumes, and the lemon’s vitamin C helps the iron in them absorb.
