  • 150gdried fettuccine
  • 250gchicken breast
  • 30gbutter
  • 70mlcream
  • 45gparmesan — grated fine on the small holes — coarse shreds sit in the sauce as lumps
  • 1garlic clove
  • 1 handfulflat parsley
  • to tasteblack pepper

Method

  1. chop · 4m

    Chicken sliced across into strips about a centimetre thick, so they cook evenly rather than drying at the thin end.

  2. fry · 12m

    Salted and fried in half the butter over a good heat until golden, then given a couple of minutes more on a lower flame with the garlic. Chicken goes right through — cut the thickest strip and there should be no pink at all and the juices should run clear.

  3. boil · 9m

    Fettuccine in well-salted water, drained a minute early, a mug of the water kept back.

  4. fold · 4m

    Chicken out, the rest of the butter and the cream into the pan and warmed through only — then the pan taken OFF the heat before the parmesan goes in. Cheese beaten into a boiling pan splits into strings and a slick of oil, and no amount of stirring gathers it back.

  5. fold · 2m

    Pasta and a splash of its water tossed through until the sauce coats rather than pools, chicken folded back in.

  6. finish · 1m

    A great deal of pepper, parsley, and more parmesan. It thickens fast on the plate, so it goes out the moment it is done.
