    Onions softened in the fat, then the spices cooked for a full minute until they smell toasted rather than dusty.

    Beef back, tomatoes, a cup of water, lid ajar, at the barest bubble.

    Beans in for the last twenty minutes, and the chocolate at the very end — it reads as depth rather than sweetness.
