- 1 handfulflat parsley
- 1 tbsptomato purée
- 2 tspghee or oil
- 2 tspseven-spice and chilli flakes

Onion grated and squeezed hard in a cloth until it is nearly dry, parsley chopped fine. Wet onion steams the bread from the inside.

Mince kneaded with the onion, parsley, purée, spices and salt until it is tacky and holds together.

Pitas split and the mixture spread thin inside — no thicker than a little finger — right out to the edges.

Brushed with oil and cooked on a medium griddle with a weight on top, turning several times. The bread crisps long before the meat is done, so take it slowly.

Cut one open before serving: the meat must be cooked right through with no pink and no raw juice. Then cut the rest into fingers, with lemon.
